摘要 A fumaric acid composition readily soluble in cold water and suitable for admixing with flavouring, colouring and sweetening agents for the preparation of beverages mixes comprises an intimate mixture of (a) fumaric acid of particle size 200 U.S. Standard Mesh Size (sieve aperture 0.074 mm.) or less, (b) a non-ionic or anionic surfactant, and (c) a sugar. Preferred compositions include fumaric acid with an average particle size of about 15 microns, 0.05-3% by weight of the surfactant (based on the weight of the fumaric acid) and 1/10th to 1 part, or even up to 25 parts, of the sugar (based on the weight of the fumaric acid). Surfactants: dioctyl sodium sulphosuccinate, polyoxyethylene sorbitan monostearate, tetramethyldecyne-diol, a solution in ethylene glycol of tetramethyl-decynediol and an alkylphenylether of polyethylene glycol, lauryl sodium sulphoacetate, and a sodium alkyl benzene sulphonate essentially free of inorganic salts, in which the alkyl group(s) are derived from a highly saturated kerosene fraction. Sugars: dextrose hydrate or lactose. The compositions may be prepared as follows. A hot aqueous solution (90-100 DEG C.) of the fumaric acid including the surfactant dioctyl sodium sulphosuccinate is contacted with ice or a mixture of water and ice to obtain finely divided fumaric acid in the triclinic form (preferred) coated with surfactant; this mixture may then be dry mixed with the sugar. (Triclinic crystals may be obtained also by sublimation of fumaric acid at temperatures not exceeding 250 DEG C. or by thermal treatment of the acid in monoclinic form at temperatures within the range of 210 DEG to 250 DEG C.) Alternatively, the fumaric acid, surfactant and sugar may be dry-mixed or wet-mixed. Finely divided fumaric acid may be produced by rapidly pouring a hot aqueous solution of the acid on to ice or an ice-water mixture (which in the absence of the surfactant gives the monoclinic form), by rapidly neutralizing a concentrated alkaline aqueous solution of an alkali metal or alkaline earth metal salt of the fumaric acid with a mineral acid, or by grinding the fumaric acid to the desired particle size. The compositions are dried in a vacuum oven to a moisture content of less than 0.1%. Examples are directed to processes for preparing the fumaric acid compositions.
