PURPOSE: A low temperature concentration method of puer tea using enzymes is provided to maintain the taste and flavor of the puer tea after concentrating. CONSTITUTION: A low temperature concentration method of puer tea comprises the following steps: mixing the predetermined amount of wild rose flowers, wild chrysanthemum flowers, chunryang tea(fermented black tea), and other types of tea leaves with the puer tea and processing water, and hot-water extracting the mixture; passing the obtained extract through a filter(8) to remove residues, and high-temperature sterilizing the extract for several seconds; and cooling the sterilized product in a cooler(13), and packaging.
