PURPOSE: A solubilization method of myofibrillar protein using ultrasonic waves, and a producing method of edible protein are provided to recycle health functional protein of myocardia. CONSTITUTION: A solubilization method of myofibrillar protein using ultrasonic waves comprises the following steps: heat-processing the myofibrillar protein at 10-50 deg C; processing the myofibrillar protein with the ultrasonic waves for solubilizing muscle protein; separating the solubilized muscle protein; and freeze-drying the protein into powder. The myofibrillar protein is obtained from myocardia of pigs. The myofibrillar protein is suspended in a solution containing sodium phosphate and a 0.1M NaCl solution having the pH of 6-8. |
