<P>PROBLEM TO BE SOLVED: To provide: a cream sauce capable of being used substitutionally for white sauce and having both good texture after being frozen or heated and cooking properties in a microwave oven; a method for producing the cream sauce; and a frozen food. <P>SOLUTION: Active gluten and processed starch are used in the cream sauce substitutionally for wheat flour used in the regular white sauce. The use amount of the active gluten in the cream sauce is 0.01-5 wt.% and the use amount of the processed starch is 2-10 wt.% based on the weight of the prepared cream sauce. Starchy raw materials other than the processed starch can be also used together with the processed starch, and the use amount of the starchy raw materials other than the processed starch is 4 wt.% or lower. Wheat flour can be used in the cream sauce if the use amount of the wheat flour is 4.5 wt.% or lower. <P>COPYRIGHT: (C)2013,JPO&INPIT |
