The present invention addresses the problem of providing: a high-quality absolute alcohol which is highly safe and free from any foreign odor; and a manufacturing process therefor. The present invention provides an absolute alcohol manufacturing process characterized by subjecting a raw material alcohol which is obtained by distillation of a crude alcohol and which has an alcohol concentration of 95v/v% or higher, an acetaldehyde content of 5mg/L or less and a total organic impurities content of 60mg/L or less to treatment with a zeolite membrane to obtain an absolute alcohol having an acetal content of 0.4mg/L or less. According to the present invention, an absolute alcohol which has high safety for the human body and such a quality that no foreign odor is organoleptically detected can be manufactured. Further, it is preferable that the raw material alcohol has a diacetyl content and a crotonaldehyde content which do not exceed specific levels respectively.
