<P>PROBLEM TO BE SOLVED: To provide pickles which are extremely favorable in quality and have particular flavors and tastes of red malt by forming a pickling floor using the activated red malt and performing pickling. <P>SOLUTION: This production method of the pickles of meat, fishes and shellfishes is characterized by immersing heated meat or fishes and shellfishes into the pickling floor using the red malt and ripening them. The pickling floor is formed by adding the red malt and yellow malt to cooked waxy rice, activation-treating the malt, and blending seasonings and salts into the malt. <P>COPYRIGHT: (C)2013,JPO&INPIT |
