<P>PROBLEM TO BE SOLVED: To provide a method for producing a baked fried dough cake bun baked by superheated steam including coating oil on a surface of the bun to be heat-processed, and baking the bun by superheated steam, in a method for producing a fried dough cake bun by wrapping a filling with dough of the bun, heat-processing the bun, and cooling the heat-processed bun. <P>SOLUTION: There is provided the method for producing a baked fried dough cake bun including an oil-coating step 40 for coating unused oil on the whole part of an outer surface of the bun for heat-processing, and a baking step 50 for heating the bun by introducing it into a steam heating device filled with superheated stream for baking the peripheral surface of the bun, in the method for producing a baked fried dough cake bun by performing filling-wrapping/forming 30 by filling the filling into the dough of the bun containing wheat flour as a main ingredient, applying heat to the formed bun to be heat-processed, and cooling the heat-processed bun. <P>COPYRIGHT: (C)2013,JPO&INPIT |
