<P>PROBLEM TO BE SOLVED: To provide a method for producing fat by interesterification reaction using lipase. <P>SOLUTION: The method for producing interesterified fat includes: a step (1) wherein soybean powdery matter selected from the group consisting of soybean powder, soybean protein and their mixture is brought into contact with raw material for interesterification including fat in the absence of lipase to obtain a reactive substrate; and a step (2) wherein the reactive substrate is subjected to interesterification reaction in the presence of a lipase-containing composition.
