PURPOSE: A novel enzyme type TTI(Time-Temperature Integrator) using laccase is provided to be used in various foods for distribution and sterilization. CONSTITUTION: A synthetic pigment or natural pigment is used in a TTI as a substrate. The synthetic pigment is selected from the group consisting of bromothymol blue, methyl orange, remazol brilliant blue, drimaren blue, reactive black 5, acid blue 25, methyl green, acid green 27, acid violet 7, orange II, tropaeolin O, congo red, poly R, and azur B. The TTI has an input unit for inputting food information. |
