PURPOSE: A freezing and drying method of tricholoma matsutake is provided to minimize the destruction of tissues of the tricholoma matsutake during freezing and drying processes. CONSTITUTION: A freezing and drying method of tricholoma matsutake comprises the following steps: collecting the tricholoma matsutake, and removing foreign materials; rapidly cooling the tricholoma matsutake at 4 deg C; slowly cooling the tricholoma matsutake at 4 deg C at 0 deg C while applying the vibration; rapidly freezing the tricholoma matsutake at 50-30 deg C below zero; and vacuum drying the frozen tricholoma matsutake. The tricholoma matsutake is either sliced or cut. The freezing process is performed by mounting the tricholoma matsutake on an absorber spread on a metal plate. |
