The invention relates to hydrolases, including lipases, and coding nucleotides, and also to the methods for production and using of these polynucleotides and polypeptides, to the processes for production of oils with low content of saturated fatty acids or with low content of trans-isomers of fatty acids, such as animal fats or plant oils with low content of saturated fatty acids or low content of trans-isomers of fatty acids.
