PURPOSE: Kimchi using functional seasonings, and a producing method thereof are provided to use a medical herb mixture for producing kimchi seasonings. CONSTITUTION: A producing method of kimchi using functional seasonings comprises a step of mixing 100 parts of salted Chinese cabbage by weight with 20-30 parts of functional seasonings by weight. The functional seasonings contain 100 parts of kimchi seasoning by weight and 20-30 parts of medical herb mixture by weight. The kimchi seasoning includes red pepper powder, radish slices, garlic, shrimp sauce, anchovy sauce, ginger, spring onion, salt, onion, glutinous rice gruel, and sugar. The medical herb mixture includes a herb concentrate, an opuntia humifusa extract, and a pueraria thunbergiana extract. The herb concentrate is obtained by boiling astragalus membranaceus, jujube, and ginger with water for 10-15 hours at 80-100 deg C. |
