<p>Baking plant for strips of dough consists of a guide path which receives supporting panels for the product to be baked; the panels are hollow and have a trapezoidal cross-section and are pushed; one after the other, towards the baking enclosure. The larger upper face of the panels forms the baking plate on which the dough is deposited at the entrance to the enclosure; the construction of the panels allows them to move in contact, edge to edge, throughout the whole of their path and thus avoids any loss of dough through any separation of the various units. The panels are not affected by temperature changes so jamming is avoided. The dough when cooked is taken to a folding device for the preparation of gaufrettes.</p> |
