Title substances are produced by treating the initial dairy product (whey, yogurt milk etc.), with an adsorbent, pref. diatomic earth, iron-fee Celite 560 or Hyflo Super Cel Ware. The obtained adsorbate is eluted by an electrolyte soln. in the 2nd step. Proteolytic enzymes are precipitated from the eluate in the 3rd step by adding an adequate salt, and in the 4th step the precipitates are purified by treating their soln. in a cation-exchange resin column with an aqs. electrolyte soln. The products are used in the dairy industry, margarine industry, confectionery, chocolate industry as flavour-improving additives. |
