A PREMIX ADDED COLLOURED SWEET POTATO POWDER AND METHOD BAKERY PRODUCTS USING THE SAME

PURPOSE: A premix manufacturing method is provided to produce premix mixing flour after pulverizing by hot-air drying orange sweet potatoes and purple sweet potatoes among normal potatoes and colored potatoes. CONSTITUTION: A sweet potato processed food is produced by adding 10-20 wt% of hot-air dried sweet potato powder to flour. Hot-air drying is conducted at 65 degrees C. Sweet potato bread is produced by adding 10 wt% of strong flour. A sweet potato muffin is produced adding 20 wt% of weak flour. The sweet potato bread is one color among white, yellow, and purple. The sweet potato muffin is one color among white, yellow, and purple. The sweet potato bread premix contains 5-10 wt% of sweet potato powder as an active ingredient. The sweet potato muffin premix contains 5-15 wt% of sweet potato powder as an active ingredient.
