PURPOSE: A manufacturing method of fruit juice rice cake is provided to extend an expiration date compared to general traditional rice cake by rapidly cooling after covering a glutinous rice cake shell while fruit juice contents are in a frozen state and to eliminate the need for extra water or juice. CONSTITUTION: A manufacturing method of a fruit juice rice cake comprises: a step of filtering fruit juice after boiling fruit; a step of boiling down adding sugar and salt into fruit juice; a step of boiling down after mixing starch dissolved in water with the product of the previous step; a step of steaming the product of the previous step in a jelly state by lowering the heat; a step of hardening the same in a freezer by placing the same in a mold after steam is released by turning off the heat after completing the previous step; a step of producing glutinous rice powder sieving, grinding the powder, and adding salt to glutinous rice after washing the same in water; a step of steaming the glutinous rice in a steamer and covering the same with a wet hemp cloth after mixing the glutinous rice powder with water; a step of producing a glutinous rice cake shell with a desired thickness by kneading dough until the dough gets glutinosity by placing the product from the previous step into a mortar; a step of shaping by placing the frozen fruit juice contents on a glutinous shell that is placed on a mold; and a step of individually packing the fruit juice rice cake after rapid cooling the same in a freezer.
