An egg roll is prepared by heating a container containing a yolk body and a liquid heat-coagulable protein, such as egg white, and rotating the container during the heating to coagulate the protein substantially concentrically about the yolk body. The heating may be effected in a liquid bath. The rotation may be effected by rolling the container on a surface, or by conveying the container in contact with a member to impart rotation or by placing it between two rotating elements, as illustrated in Fig. 2. Fig. 3a shows a suitable apparatus wherein the containers are rotated by contact with surface 80 as they are conveyed through the bath by conveyor 59. Fig. 5 shows another apparatus, the containers being moved through the bath by flanges 135 on conveyor 132, the rotation being on the surface 126. |
