The invention relates to biotechnology and can be used in the wine industry.The strain of yeast Saccharomyces cerevisiae, deposited in the National Collection of Nonpathogenic Microorganisms under the number CNMN-Y-23, can be used for the production of white dry wines.The result consists in the collection of a local yeast strain with high technological characteristics, in particular with the ability of carbohydrate fermentation at an increased active acidity of the must.
