摘要 PURPOSE: A method of making functional Kimchi aiding in diabetes with Sambung nyawa(Gynura procumbeus) leaves is provided to make functional Sambung nyawa-Kimchi aiding in diabetes treatment by mixing Sambung nyawa leaves with other raw materials of Kimchi such as Chinese cabbages, cabbages, radishes, lettuces, green onions, and cucumbers and removing toxic ingredients contained in Sambung nyawa during the fermentation of Kimchi. CONSTITUTION: A method of making Sambung nyawa-Kimchi comprises the following g: a salt down step of sprinkling salt on Sambung nyawa leaves, letting stand for three hours, rinsing the salted leaves with clean water and draining the water; and a mixing step of mixing red pepper powder 12%, garlic 3%, green onion 5%, ginger 1%, shredded radish 15%, fermented fish 5%, sugar 2%, salt 3%, and other materials with the salted Sambung nyawa leaves. A method of making Sambung nyawa-pickles comprises a raw materials preparation step of soaking Sambung nyawa leaves in brine solution for three hours, draining the water, and putting the salted Sambung nyawa leaves with other favorite vegetables such as red chili peppers in a clean container; and a submersion step of boiling a spice solution of water mixed with desired amounts of salt, garlic, sugar, vinegar, ginger, and bay leaf, pouring in the boiling brine to submerge the vegetables, and sealing the container.
