摘要 PURPOSE: A producing method of powder for molding snacks using blue-backed fish is provided to prevent the taste change of the snacks by having excellent storage property. CONSTITUTION: A producing method of powder for molding snacks using blue-backed fish comprises the following steps: dipping blue-backed fish slices in 5wt% of acetic acid aqueous solution at 50-60 deg C for 30-60 minutes; dehydrating the blue-backed fish slices using a centrifuge; mixing 90-95wt% of dehydrated blue-backed fish slices, 3-5wt% of vegetable juice, 1-2.5wt% of natural anti-oxidant, 0.5-1.5wt% of salt, and 0.1-0.5wt% of citric acid, and crushing the mixture to obtain a mixed colloid; spreading the mixed colloid on a flat plate body in the thickness of 2-3mm, and freeze-dried mixed colloid to obtain a sponge type mixed colloid; crushing the dried sponge type mixed colloid to obtain seasoned fish powder; and seal-packaging the fish powder after mixing with mixed powder containing less than 3wt% of flour containing 0.5-1.5wt% of Na type stearyl lactate or 60-75wt% of mixture containing the flour or rice flour.
