PURPOSE: A cuttlefish processing method is provided to facilitate the processing of a cuttlefish and to improve sanitation. CONSTITUTION: A cuttlefish processing method comprises a abdomen cutting and body separating process(S1) for cutting the body of a cuttlefish and removing internal organs, bone, head, and legs, a washing process(S2) for washing the separated body of the cuttlefish, a shell removal process(S3) for removing the shell of the cuttlefish, a body washing process(S4) for removing the fin of the cuttlefish body and washing the cuttlefish body, an incising process(S5) for uniformly incising the cuttlefish body, a seasoning process(S5') for putting salt in the cuttlefish body, a packing process(S6) for wrapping the cuttlefish body, and a freezing process(S7) for refrigerating the cuttlefish body.
