PROBLEM TO BE SOLVED: To provide a food material which can be used as an alternative to gum arabic.

SOLUTION: A jelly-like substance which is produced by culturing a binucleated cell/a sexual cell of basidiomycetes or ascomycetes and then adding an organic solvent to the culture to cause the precipitation of the jelly-like substance, can be used as an emulsifying agent, a thickening agent and a water leakage inhibitor. The organic solvent is any one selected from: ethanol; methanol; acetonitrile; acetone; and hexane and is added to the culture solution in a volume two times or more the volume of the culture, and a precipitated product produced as a result of the addition of the organic solvent is used. The basidiomycete is any one selected from: Phallus impudicus L. :Pers.; Pseudocolus schellenbergiae (Sumst.) Johnson; Ileodictyon gracile Berk; Lysurus mokusin (L.: Pers.) Fr.; and Kobayasia nipponica, and the ascomycete is any one selected from: Bulgaria inquinans Fr.; and Galiella celebica (P. Henn.) Nannf.
