摘要 PURPOSE: The manufacturing method of a meat product with stability is provided to suppress a fat oxidation and a microorganism growth using a chwi extract. CONSTITUTION: The manufacturing method of a meat product includes a first step obtaining a chwi extract from a chwi and a second step mixing a ground meat and a chwi extract. A ground meat is at least one kind selected among pork, beef, and chicken. A meat product contains the 0.01-1.00 wt% of chwi extract about whole weight as an active constituent. An extract is an ethanol extract. A chwi extract is the ethanol extract of 50-99%. A chwi extract is acquired by removing impurities from the leaf, stem, root of Aster scaber, goldenrod, Ligularia fischeri, Ainsliaea acerifolia, a kind of marsh plant, Saussurea seoulensis, and Saussurea grandifolia; washing; dehydrating; grinding; adding the water or alcohol of about 1-50 times volume by weight, or a mixed solvent thereof to a extraction container, and repeatedly extracting for 0.1-48 hours through 1-3 times in the water bath of room temperature.
