摘要 <p>The present invention relates to a method for detecting fatty acid in goose liver, and is also applicable in detecting palm oil acid, palm acid, stearic acid, oleic acid, and linoleic acid. The method comprises 1) extraction of fat from a goose liver; 2) saponification; 3) methyl esterification; and 4) chromatographic analysis, wherein in step 1), the extraction of the fat from the goose liver is extracting the fat from the goose liver by a chloroform-methanol solution; in step 2), the saponification is carried out by a KOH-ethanol solution; and in step 3), the methyl esterification is a methyl ester reaction by BF3-methanol, and in the reaction, the pH value is 6.0 to 7.0. In the present invention, through improving saponification and methyl esterification conditions, the recycle rate of the fatty acid in the goose liver and the accuracy of the detection are improved, and five single fatty acids can be detected at the same time. The present invention is expected to become a Chinese national standard for measuring the absolute content of fatty acid in goose liver, which is applicable in grading the quality of goose liver, and provides a more scientific method for formulating relevant standards.</p>
