<P>PROBLEM TO BE SOLVED: To provide a packed and sterilized gel food product having a protein content of 6 mass% or more, fully having shape retainability and water retentivity, restricted in coagulation or denaturation of protein due to retort sterilization, and having good and smooth texture, especially a packed and sterilized high protein gel food product having a physical property suitable for a person with difficulty in chewing or swallowing to eat and drink. <P>SOLUTION: The high protein gel food product is provided which contains agar, fermented cellulose, and further carrageenan and/or gellan gum. <P>COPYRIGHT: (C)2013,JPO&INPIT |
