PURPOSE: A method for producing a transgenic sweet potato plant with a high content of carotenoid and anthocyanine is provided to ensure environmental stress tolerance and to enhance the yield. CONSTITUTION: A method for producing a transgenic sweet potato plant with a high content of carotenoid and anthocyanine comprises a step of transforming a sweet potato plant with a recombinant vector containing IbOr-Ins gene mutant and overexpressing the mutant. The mutant is prepared by inserting a certain base sequence into a sweet potato-derived IbOrange gene. A composition for enhancing the carotenoid content in a sweet potato plant contains the mutant. A composition for enhancing environmental stress tolerance in a sweet potato plant contains the mutant.
