<p>PURPOSE: A manufacturing method of tea-bagged Dashi is provided to have environment-friendly property and to enable tea-bagged Dashi to be extracted quickly compared to the conventional technology. CONSTITUTION: Dried anchovy is obtained by sterilizing anchovy at 115-125deg.C for 10-20 minutes and hot-air drying at 90-100deg.C for 13-17 hours. Anchovy pieces of 6-30 mesh are obtained by crushing the dried anchovy. Dried kelp is obtained by sterilizing kelp at 115-125deg.C for 10-20 minutes and hot-air drying at 90-100deg.C for 10-14 hours. Kelp pieces of 6-30 mesh are obtained by crushing the dried kelp. Kelp 1-5 parts by weight, purified water 400-600 parts by weight are added to anchovy 100 parts by weight, heated at 90-105deg.C for 1-2 hours and filtered to obtain extract. Extraction concentrate are obtained by adding low sweetened sugar 4-8 parts by weight and refined salt 1-3 parts by weight to the extract 100 parts by weight and concentrating until 55-65Brix. Broth extract is obtained by sterilizing the concentrate at 65-75deg.C for 15-25 minutes and filtering. Anchovy pieces 60-76 weight%, kelp pieces 4-10 weight%, garlic pieces 0.5-1.5 weight%, the broth extract 5-12 weight%, broth extracted powder 4-10 weight% and broth base 5-12 weight% are mixed and dried to manufacture a tea-bagged Dashi mixture composition. The mixture composition is packed into tea-bags. The tea-bag is made of a biodegradable material and has the cubic shape. The biodegradable material is PLA(polylactic acid).</p> |
