FIELD: food industry.SUBSTANCE: invention relates to the technology for production of fish-and-vegetable preserves. The method envisages recipe components preparation, carrots, bulb onions and white vegetables cutting and sauteing in vegetable oil, parsley green milling and the listed components mixing, sunflower flour pouring with drinking water and maintenance for swelling, the flour mixing with tomato paste, drinking water, sugar, black hot pepper, allspice and laurel leaf, the mixture cooking and addition of acetic acid to produce a sauce, gobies maintenance in salt solution, mealing in wheat flour and frying in vegetable oil, the gobies, vegetable mixture and sauce packing, sealing and sterilisation.EFFECT: method allows to reduce the manufactured target product adhesion to container walls. |
