<P>PROBLEM TO BE SOLVED: To provide bread that is assumed to be an emergency food in a disaster and has superior eating quality, a nutritional property and storage stability and a method for producing the same. <P>SOLUTION: The method for producing bread in a paper container includes a step in which a mixture of gelatinized wheat flour dough and a protein material and/or a micronutrient component-containing material is mixed with ungelatinized wheat flour to prepare bread dough, a step of fermenting the bread dough, a step of baking the bread dough in a heat-resistant paper container and a step in which in a closed state of the heat-resistant paper container, the heat-resistant paper container and contents thereof are sterilized.
