PURPOSE: A method for predicting growth rate of Bacillus cereus in wet noodle is provided to accurately and quickly predict the growth rate and to prevent food poisoning. CONSTITUTION: A method for predicting the growth rate of Bacillus cereus comprises a step of applying two variables of ethanol concentration(X1) and vitamins B1 concentration(X2) contained in wet noodle into equation 8(Y = 0.0211296 - (0.009045 x X1) - (0.002358 x X2) - (0.000077 x X1X2) - (0.0004788 x X12)- (0.000978 x X22)) to obtain maximum growth rate Y. The wet noodle is maintained at 7-13°C. In the equation, the unit of the X1 and X2 is v/v% and ppm each. |
