<P>PROBLEM TO BE SOLVED: To provide noodles which require a highly shortened boiling time compared with non-grooved noodles and are still comparable to non-grooved noodles in appearance, taste, and texture after cooking. <P>SOLUTION: The cross-section of a noodle string has a rectangular shape, wherein the noodles have a plurality of grooves formed along the longitudinal direction of the noodle string, the plurality of grooves in the cross-section of the noodle string is alternately disposed from the two long opposing sides toward the inside of the noodle string, the grooves have depths perpendicular to the long side that are greater than one-half of the length of the short side. and the total area of the noodle string portion is 20 to 50% of the rectangular shape of the cross-section. <P>COPYRIGHT: (C)2013,JPO&INPIT |
