Novelty: a method meant for the preparation of mashed chicken meat products mixed or stuffed with smoked or maturated meat. Preparation phases: a) mixing of the chicken meat with water, salt, optional bread crumbs and vegetable fibres; b) mixing and CO2 cooling; c) shaping of the mixture ; d) treatment by heat; e) deep cooling of the resulted product. Stuffing with smoked or matured meat is performed by a shaping appliance. Advantages: excellent solid structure of the thus-prepared products; organoleptic features conserved. |
