PURPOSE: A producing method of red bean powder using a freeze-drying method is provided to improve the storage property of the red bean powder without using synthetic preservatives. CONSTITUTION: A producing method of red bean powder comprises the following steps: washing red beans, and roasting the red beans at 50-80 deg. C for 3-5 hours; mixing the roasted red beans with water and salt in a weight ratio of 1:1.5-3:0.001-0.002, and boiling the mixture at 80-130 deg. C for 6-10 hours; adding more water into the boiled red beans, and crushing the mixture before concentrating; mixing the boiled red beans and the concentrated red bean liquid in a ratio of 1:0.5-1.5, and freeze-drying the mixture at 30-80 deg. C below zero for 3-7 days; and crushing the freeze-dried mixture into 50-300 meshes.
