<P>PROBLEM TO BE SOLVED: To provide a method for manufacturing refined oil-and-fat with less by-products, good flavor and hue, and reduced smoke generation. <P>SOLUTION: The method for manufacturing the refined oil-and-fat includes: (1) carrying out an adsorption treatment of bringing oil-and-fat into contact with clay (A) and at least one alkaline earth metal salt (B) selected from the group consisting of an oxide, a carbonate, and a silicate of an alkaline earth metal; and (2) subsequently carrying out a deodorization treatment of bringing the resultant oil-and-fat into contact with water vapor at 180°C or less. <P>COPYRIGHT: (C)2013,JPO&INPIT |
