摘要 PURPOSE: A method for making traditional liquor and natural brewed vinegar using sea cucumber is provided to take in an ingredient of chitosan and to discharge heavy metal from human body. CONSTITUTION: A method for making traditional liquor using sea cucumber comprises: a step of extracting sea cucumber, crab, clam and pure water in a weight ratio of 20 : 10 : 10 : 60 and preparing sea cucumber liquid; a step of mixing the sea cucumber liquid, hard-boiled rice, nuruk powder, sikhye(rice punch), and pure water in a jar in a weight ratio of 14 : 24 : 12 : 10 : 40 and fermenting at 30 deg.C. for 7-10 days.
