摘要 PURPOSE: A strawberry jam is provided to contain saponin which is contained in black-red ginseng with large amount. CONSTITUTION: A strawberry jam comprises strawberry 100 parts by weight, black-red ginseng 7-10 parts by weight, pectine 0.5-1 parts by weight, and organic sugar 65-70 parts by weight. A strawberry jam includes more jelly 15-20 parts by weight about strawberry 100 parts by weight. The particle size of jelly is 1-3 mm. Black-red ginseng is manufactured by fermenting and ripening ginseng with maintaining temperature of 40-85 deg. C and humidity of 80-95% for 18-22 days in a fermentation and maturation room of hard charcoal and loess. A fermentation and maturation room of hard charcoal and loess composites of a meld wall(10) of hard charcoal and loess which is composed of a mixture of hardwood charcoal 65-75% of weight, red clay 25-35% of weight.
