<P>PROBLEM TO BE SOLVED: To provide a polyphenol composition manufacturing method excellent in solubility in water, which uses an inexpensive material giving little influence on the flavor of a composition. <P>SOLUTION: There is provided the polyphenol composition manufacturing method which includes a step wherein a water-insoluble polyphenol (A) and at least one kind (B) selected from among a catechin, chlorogenic acid and a water-insoluble polyphenol methylated substance undergo heat treatment at 100-180°C, in the presence of an aqueous medium. <P>COPYRIGHT: (C)2013,JPO&INPIT |
