<P>PROBLEM TO BE SOLVED: To provide a fractionation method which is more efficient and industrially suitable for recovering oils/fats having a low XXX triglyceride content but a high X2U triglyceride content from oils/fats containing X2U triglycerides (X is a saturated fatty acid residue and U is an unsaturated fatty acid residue) and having a high XXX triglyceride content (X is a saturated fatty acid residue). <P>SOLUTION: The method for fractionating oil and fat, is characterized in that an oil/fat having a triglyceride content of 60 wt% or more and including, among all triglycerides, 10-70 wt% of an XXX triglyceride and 10-50 wt% of a X2U triglyceride, is mixed with a fatty acid lower-alkyl ester; a raw material for crystallization is prepared, the raw material having a 10-50 wt% triglyceride content and a 50-80 wt% fatty acid lower-alkyl ester content; the raw material for crystallization is heat-melted and subsequently cooled; a crystal precipitate is formed; and the precipitate is fractionated, resulting in a liquid part (olein part) having a high X2U triglyceride content. <P>COPYRIGHT: (C)2013,JPO&INPIT |
