The installation (1) has a sealed scalder (3) that is maintained in an elevated position on a reversed support frame. The scalder defines a bottom opening that is arranged in a horizontal manner, where the opening receives carcass (2) of an animal e.g. sheep, fully. A suspending unit (4) is utilized for extracting the carcass and holding the carcass in a position for a specific period. A projection unit (5) projects saturated vapor (V) in the scalder, where the vapor is maintained at constant temperature for carrying out scalding operation. An independent claim is also included for a method for scalding an animal carcass.
