PURPOSE: A producing method of sikhye(fermented rice punch) using agar is provided to improve the texture and drinking feeling of the sikhye, and to enable users to feel full after drinking the sikhye. CONSTITUTION: A producing method of sikhye(fermented rice punch) using agar comprises the following steps: preheating a malt extract with a pre-heater to 55-70 deg C: crushing hard-boiled rice granules into 70-90 meshes; mixing the malt extract and the hard-boiled rice granules, and saccharifying the mixture at 60-70 deg C; boiling the saccharified mixture at 95-100 deg C; and adding the agar, coffee powder, and sugar into the mixture. |
