<P>PROBLEM TO BE SOLVED: To provide a method for producing a granular meat-like protein containing food which is mainly made of granular defatted soybean protein, and never gets out of shape after cooking, and has juiciness and elasticity. <P>SOLUTION: The method for producing the meat-like food includes: a step of mixing the granular defatted soybean protein which has been reconstituted with room-temperature or hot weak alkali solution with egg albumen or albumen powder; a step of molding; a step of performing heating treatment such as steam-heat; and a step of baking. <P>COPYRIGHT: (C)2013,JPO&INPIT |
