摘要 PURPOSE: Rice cake for stir-fried rice cake dish, and a producing method thereof are provided to offer the savory taste and flavor of scorched rice to the rice cake without using a separate functional component. CONSTITUTION: A producing method of rice cake for stir-fried rice cake dish comprises the following steps: crushing rice soaked in water to obtain rice powder; mixing 100 parts of rice powder by weight, 150 parts of 40-65 deg C water by weight, and 0.1-0.2 parts of liquefying enzyme by weight, and stirring the mixture for gelatinizing; roasting the gelatinized rice mixture on a 220-280 deg C heating plate for 120-150 minutes to obtain scorched rice powder; mixing 100 parts of scorched rice powder by weight with salt and purified water, and steaming the mixture for 25-30 minutes after kneading; mixing minced pork, minced kimchi, ground pineapple, ground onion, and other ingredients, and roasting the mixture to obtain fillings; inserting the scorched rice powder in a rice cake extruder, and inserting the fillings into a hollow insertion unit for molding the rice cake in a sausage form; and sealing both ends of the rice cake.
