PURPOSE: A producing method of heat-processed flour for frying batter is provided to offer the improved water absorption rate, dispersibility, and batter yield of the flour to users. CONSTITUTION: A producing method of heat-processed flour for frying batter comprises the following steps: mixing flour and water in a high-speed agitator; heat-processing the mixture in a ribbon mixer by directly or indirectly heating; cooling the heat-processed mixture at room temperature; and crushing the cooled mixture, and sieving. The direct heating process is performed by heating the mixture with a microwave oven, steam, hot air, or by roasting. The indirect heating process is performed by inserting the mixture in an outer jacket, and using heat transfer oil or steam as a heating element. |
