A method for determining the naturalness of juices which comprise anthocyanins provides taking samples and determining undices, according to which a conclusion on the naturalness is made. The taken sample is divided into two samples, one of which is diluted with distilled water, then aqueous-alcoholic extracts of the samples are prepared, the absorbance of the both samples is determined, a difference of the absorbance of the aqueous-alcolic extracts of non-diluted and diluted samples is calculated in percents, and, if the difference is more than 2 %, a conclusion is made on the fact that the juice is falsified. |
