A method for obtaining kefir adding raw pumpkin vegetable material provides for receiving, cleaning, cooling and reserving the raw material, normalizing milk and preparing a mixture, homogenizing the mixture, pasteurizing and cooling the mixture, adding a starter culture and ripening of the mixture, mixing, cooling and maturing of a milk curd, cooling the kefir. Prior to adding the starter culture the mixture is supplemented with an additive of raw pumpkin vegetable material in an amount of 30 % to total weight thereof. |
