<P>PROBLEM TO BE SOLVED: To provide a process for producing an antioxidant by a fermentation process utilizing safe microbes and safe food materials, and to provide an antioxidant obtained by a fermentation process. <P>SOLUTION: The process for producing an antioxidant includes cultivating microbes or vegetable lactic acid bacteria belonging to specified Bacillus genus in a culture medium containing soy bean residue, and extracting an antioxidant from a supernatant of the culture medium.
