Salts of glutamic acid such as sodium or calcium glutamate are combined with suitable mono- or polybasic organic acids such as formic, adipic, citric, or tartaric acid to form double compounds which, particularly in admixture with other salts such as sodium citrate, sodium tartrate, or lithium formate, are suitable as flavourings for food. The glutamic acid salt and the organic acid may be combined with one another in equimolecular proportions in the presence of water, which is afterwards removed. When liquid acids are used no water is necessary. When di- or polybasic acids are employed double compounds may be formed using proportions of salt and acid other than equimolecular. Excess of either reaction component may also be employed, and may, if necessary, be removed from the product. Instead of starting with the organic acid and sodium glutamate, the latter may be replaced by glutamic acid and caustic soda.
