PURPOSE: An environment-friendly red pepper drying method using sunlight is provided to improve the quality of dried red pepper by firstly drying the red pepper inside a plastic greenhouse, and secondly drying the red pepper outside. CONSTITUTION: An environment-friendly red pepper drying method comprises the following steps: harvesting red pepper, and washing; firstly drying the red pepper in a greenhouse at 50-55 deg. C for 5-7 days using sunlight; secondly drying the dried red pepper outside for 5-7 days using sunlight; and packaging the dried red pepper using a plastic bag, and storing in a shaded place.
