PURPOSE: A producing method of microorganism-fermented tea is provided to offer excellent functionality of the tea compare to a conventional producing method to users. CONSTITUTION: A producing method of microorganism-fermented tea comprises the following steps: colleting tea leaves from Camellia sinensis var. sinensis tea trees; heat-processing the tea leaves for inactivating enzymes inside the leaves; rolling and rubbing the tea leaves, and drying; adding water into the obtained rough tea to make the water content of 37-43wt%; and fermenting the rough tea at 42-48 deg. C for 35 days, by turning over the rough tea once every 5 days for 7 times.
