<P>PROBLEM TO BE SOLVED: To provide a method for producing meat, capable of rapidly and uniformly thawing frozen meat with high product yield and without deterioration in the quality of the meat. <P>SOLUTION: The frozen meat can be rapidly thawed while maintaining the quality in the subsequent production process by the following steps (1) and (2).
