<P>PROBLEM TO BE SOLVED: To provide a method for producing meat, capable of rapidly and uniformly thawing frozen meat with high product yield and without deterioration in the quality of the meat. <P>SOLUTION: The frozen meat can be rapidly thawed while maintaining the quality in the subsequent production process by the following steps (1) and (2). (1) Immersing and heating frozen meat in an aqueous solution of 6-55°C; and (2) immersing and cooling the meat obtained in (1) in an aqueous solution of 0-4°C. <P>COPYRIGHT: (C)2013,JPO&INPIT |
